Delightful recipe: Bimbli chutney
This chutney made from bimbli is easy to prepare, looks delicious and tastes even better.
2 cups of bimbli cut into thin slices.
1 tsp coconut oil/ vegetable oil
1/2 tsp black mustard seeds
1/2 tsp fenugreek seeds
4-5 green chillies
2-3 sprigs of curry leaves
1/4 tsp turmeric
1/2 tsp asafoetida (optional)
Heat oil in a pan. Add the mustard seeds, when they begin to splutter add fenugreek seeds. Fry till fragrant (taking care not to burn). Then add the chopped green chillies and curry leaves. Now add the sliced bimbli and stir well. Add a cup of water and let it come to a boil. Add turmeric and salt mix well and let it simmer for 5 minutes. Add asafoetida and turn off the heat. Reduce the water to half a cup if you want thicker chutney. Enjoy the chutney with rice or rotis.
