Delightful recipe:Cashew sorpotel

Sorpotel is a traditional Goan dish prepared from pork. This recipe is a vegetarian version of the same dish and is equally tasty.


7-8 semi ripe cashews

2 tsp. ginger garlic paste

Salt & sugar to taste

2 big Onions (finely chopped)

4 green chillies (finely chopped)

Oil for frying

For the masala:

25 dried red chillies, 2 cinnamon sticks (3 inches long), 1 tsp. cloves, 4 cardamom, ½ tsp. pepper corn, ½ tsp. cumin seeds, ½ tsp. saffron powder, 10 garlic cloves, 1 inch ginger, 1 tsp. poppy seeds, 1 small ball of tamarind and 50 ml vinegar. Grind all the ingredients together with the vinegar.

Method: Wash the cashews and cut into small cubes. Apply salt generously and keep aside. After about an hour drain the juice and keep the cashew pieces under a heavy weight until all the juice is drained. Apply ginger garlic paste and fry them in a pan till golden brown and keep aside.

Take a pan, heat a little oil and fry the finely chopped onions and green chillies. Add the ground masala and fry well. Add a dash of sugar. Then add the fried cashew pieces and fry for a few minutes. If needed add a little more vinegar. Next, add the cashew juice that was kept aside and allow it to cook on a slow flame till done. Serve hot with rice.
