Delightful Recipe: Banana blossom stir fry with kabuli chana
A simple dish prepared using the banana blossom called “Bondi Bhaji” in Goa.
Banana blossom chopped – 1 cup
Kabuli chana – A handful
Ingredients for seasoning:
Cumin seeds – 1/2 tsp
Turmeric powder – 1 tsp
Green chilly chopped – 1
Curry leaves – 2-3 Sprigs
Chopped onions – 1/2 Cup
Garam masala powder – 1/2 tsp
Dhania-jeera powder – 1/2 tsp
Green Coriander – A handful finely chopped for garnishing.
Fresh grated coconut – A handful, Salt – To taste
Remove the outer covers of the blossom till you get the tender one, chop it and soak it in water along with kabuli chana overnight. Add fresh water to it and cook in a cooker adding a little salt. Finely chop onions, green chilli, coriander and keep it aside. Place a skillet with 2 tsp of cooking oil on a medium flame. When hot, add cumin seeds to it. When it splutters, add the chopped green chilli and curry leaves. Now add the chopped onions and some salt and stir at regular intervals. When the onions turn transparent, add the garam masala, turmeric, dhania-jeera powder and stir. Finally add the banana blossom, kabuli chana and stir well. Cook for a few minutes. Enjoy this dish with chapatti, roti or rice.
