Delightful Recipe: Watermelon Granita

Low calorie watermelon granita is very refreshing on a hot summer day.

Watermelon, a bit of sugar and a squeeze of lime

combine to form a tasty low calorie frozen treat.


Serves: 4



4 cups seedless watermelon cubes

1 tbsp. granulated sugar

2 tsp. fresh squeezed lime juice



Place the watermelon, sugar and lime juice in a blender and puree until smooth. Pour the mixture into a shallow dish and place in the freezer.

After 20 minutes, use a fork to rake the mixture, scrapping the frozen edges into the middle. Continue to freeze for 2 hours, raking with a fork every 20- 30 minutes, until completely icy. Serve in scoops garnished with a sprig of mint leaves.
